Flavour Notes: Dates, Dried Apricot, Hazelnut
Juan Felipe Restrepo is now one of the managers of the El Jardin farm located on the outskirts of Chinchina, Caldas. It was a farm where the traditional process of coffee can be found but with the arrival of Pipe and his family, they have begun to carry out new processes such as this batch with a natural process. After the coffee is collected, a selection process is carried out by float to eliminate the less dense cherries. Then the anaerobic fermentation of 34 hours begins. It is then mechanically intermittently dried by controlling the temperature. A sweet and intense coffee with notes of dates, dried apricots and hazelnut.
Espresso – ratio 1:2 (18g coffee to 36g espresso)
Filter – ratio 1:17 (15g coffee to 250g water)
